- 1/4 cup mayonnaise
- 2 tablespoons finely chopped celery
- 1 tablespoon finely chopped red onion
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
- 4 slices bacon, cooked until crisp
- 8 slices bread
- 4 slices cheese (cheddar, Swiss, or provolone)
- Butter for grilling
Instructions
- In a medium bowl, combine the drained tuna, mayonnaise, chopped celery, chopped red onion, and Dijon mustard.
- Season with salt and pepper to your liking. Mix well.
- Gently fold in the crumbled crispy bacon.
- Butter one side of each slice of bread.
- Place one slice of bread, butter-side down, in a skillet or on a griddle over medium heat.
- Layer with a slice of cheese, then a generous portion of the tuna-bacon mixture, followed by another slice of cheese.
- Top with the second slice of bread, butter-side up.
- Grill for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Repeat with the remaining ingredients.
- Cut in half and serve hot.
