Ingredients

Scale
  • 2 cans (5 ounces each) tuna, drained
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 4 slices bacon, cooked until crisp
  • 8 slices bread
  • 4 slices cheese (cheddar, Swiss, or provolone)

Instructions

  1. In a medium bowl, combine the drained tuna, mayonnaise, chopped celery, chopped red onion, and Dijon mustard.
  2. Season with salt and pepper to your liking. Mix well.
  3. Gently fold in the crumbled crispy bacon.
  4. Butter one side of each slice of bread.
  5. Place one slice of bread, butter-side down, in a skillet or on a griddle over medium heat.
  6. Layer with a slice of cheese, then a generous portion of the tuna-bacon mixture, followed by another slice of cheese.
  7. Top with the second slice of bread, butter-side up.
  8. Grill for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  9. Repeat with the remaining ingredients.
  10. Cut in half and serve hot.

Notes

  • For a richer flavor, use good quality mayonnaise.
  • Feel free to add a pinch of paprika or a dash of hot sauce to the tuna mixture for an extra kick.
  • Any type of cheese that melts well will work beautifully in this sandwich.
