Ingredients
Scale
- 1 lb yellow squash, thinly sliced
- 8 oz bacon, chopped
- 1/2 cup chopped onion
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).

- Add the chopped onion to the bacon drippings and sauté until softened, about 5 minutes.
- Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth.
- Bring the sauce to a simmer, stirring constantly, until thickened. Season with salt and pepper.
- Remove from heat and stir in the shredded cheddar cheese until melted.
- Stir in the cooked bacon.
- In a baking dish, layer the thinly sliced yellow squash.
- Pour the cheese and bacon sauce over the squash.
- Top with breadcrumbs.
- Bake for 25-30 minutes, or until bubbly and the breadcrumbs are golden brown.
Notes
- For extra crispiness, you can toast the breadcrumbs lightly before adding them to the casserole.
- Feel free to add other cheeses like Gruyere or Monterey Jack for a different flavor profile.
- Ensure your squash slices are uniform in thickness for even cooking.
