  • 1 lb yellow squash, thinly sliced
  • 8 oz bacon, chopped
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chopped bacon in a skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
  3. Add the chopped onion to the bacon drippings and sauté until softened, about 5 minutes.
  4. Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth.
  5. Bring the sauce to a simmer, stirring constantly, until thickened. Season with salt and pepper.
  6. Remove from heat and stir in the shredded cheddar cheese until melted.
  7. Stir in the cooked bacon.
  8. In a baking dish, layer the thinly sliced yellow squash.
  9. Pour the cheese and bacon sauce over the squash.
  10. Top with breadcrumbs.
  11. Bake for 25-30 minutes, or until bubbly and the breadcrumbs are golden brown.
