Description

Enjoy a quick, satisfying, and high-protein breakfast with this classic Avocado Toast topped with a perfectly cooked egg. It is simple to make and full of flavor.

Ingredients

Scale
  • 1 slice whole-grain bread
  • 1/2 ripe avocado
  • 1 large egg
  • 1 teaspoon olive oil or butter
  • Pinch of salt
  • Pinch of black pepper
  • Optional: Red pepper flakes for heat

Instructions

  1. Toast the slice of bread until it is golden brown and crisp.
  2. While the bread toasts, prepare your egg. Heat the olive oil or butter in a small non-stick skillet over medium heat.
  3. Crack the egg into the skillet. Cook the egg to your preference (sunny-side up, over easy, or scrambled). Season with salt and pepper.
  4. Scoop the avocado flesh onto the toasted bread. Mash it lightly with a fork right on the toast.
  5. Season the mashed avocado with a small pinch of salt and pepper.
  6. Carefully place the cooked egg on top of the avocado layer.
  7. Sprinkle with red pepper flakes, if you like a little spice. Serve immediately and enjoy your delicious breakfast!

Notes

  • Use good quality, fresh bread for the best texture.
  • For extra flavor, sprinkle the avocado with a squeeze of fresh lemon juice before adding the egg.
  • You can poach the egg instead of frying for a lighter option.
