Description

  • 1 (28 ounce) can crushed tomatoes
  • 1 cup whole milk
  • 1 cup beef broth
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion, carrots, and celery (the soffritto) to the pot. Cook gently for 8 to 10 minutes until softened, stirring often.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the red wine. Let it simmer and reduce by half, scraping up any browned bits from the bottom of the pot. This takes about 5 minutes.
  5. Stir in the crushed tomatoes, milk, beef broth, bay leaf, and oregano. Season generously with salt and pepper.
  6. Bring the sauce to a gentle simmer. Reduce the heat to low, cover partially, and let it cook slowly for at least 2 hours, or up to 4 hours, stirring occasionally. The longer it simmers, the better the flavor.
  7. Remove the bay leaf before serving. Adjust seasoning if needed. Serve over your favorite pasta.

Notes

  • For a weeknight version, you can reduce the simmering time to 1 hour, though the flavor will be less developed.
  • The milk tenderizes the meat and balances the acidity of the tomatoes. Do not skip it.
