- 2 cups peeled and diced apples (about 2 medium apples)
- 1/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 8 egg roll wrappers
- 1/4 cup powdered sugar, for dusting (optional)

Instructions
- Melt butter in a skillet over medium heat.
- Add diced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are tender, about 5-7 minutes. Stir in lemon juice. Let the filling cool slightly.
- Lay an egg roll wrapper flat. Spoon about 2-3 tablespoons of apple filling onto the center of the wrapper.
- Fold the bottom edge of the wrapper over the filling. Fold in the sides. Roll up tightly to form a log.
- Repeat with remaining wrappers and filling.
- If baking: Preheat oven to 400°F (200°C). Place egg rolls on a baking sheet lined with parchment paper. Spray generously with cooking spray. Bake for 10-12 minutes, or until golden brown and crispy.
- If frying: Heat about 1 inch of cooking oil in a skillet to 350°F (175°C). Carefully fry egg rolls in batches for 2-3 minutes per side, until golden brown and crispy. Drain on paper towels.
- Dust with powdered sugar, if desired. Serve warm.
