Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples

Instructions

  2. In a large bowl, whisk together the flour, rolled oats, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the chopped apples.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, you can add a sprinkle of cinnamon sugar on top of the muffins before baking.
  • Ensure your apples are chopped into small, bite-sized pieces.
  • You can use any type of apple you prefer, such as Gala, Fuji, or Honeycrisp.
