Description
These avocado deviled eggs offer a modern, healthier twist on a classic. Creamy avocado replaces mayonnaise, creating a rich texture. A hint of lime adds a zesty, fresh flavor.
Ingredients
Scale
- 6 large hard-boiled eggs, peeled and halved lengthwise
- 1 ripe avocado, pitted and scooped out
- 1 tablespoon fresh lime juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- Pinch of black pepper
- Paprika for garnish
- Fresh cilantro or chives, chopped, for garnish (optional)
Instructions
- Carefully remove the yolks from the hard-boiled egg whites. Place the yolks in a medium bowl.
- Add the avocado, lime juice, Dijon mustard, salt, and black pepper to the bowl with the egg yolks.
- Mash the ingredients together with a fork until smooth and creamy.
- Spoon or pipe the avocado mixture back into the empty egg white halves.
- Garnish with a sprinkle of paprika and fresh cilantro or chives, if desired.
- Serve immediately or chill until ready to serve.
Notes
- For best results, use a ripe but firm avocado to ensure a smooth mixture.
- If you prefer a spicier kick, add a pinch of cayenne pepper to the mixture.
- These deviled eggs are best enjoyed fresh, as the avocado can oxidize and turn brown over time.
