Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
- In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2 minutes.
- Beat in the egg and vanilla extract until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
- Fold in the shredded coconut, chocolate chips, and toasted almonds by hand using a spatula.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9 to 11 minutes, or until the edges are lightly golden brown and the centers are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Toast your almonds lightly in a dry skillet over medium heat for 3 to 5 minutes, stirring often, before adding them to the dough. This deepens the flavor.
- For an extra chocolatey finish, you can drizzle melted chocolate over the cooled cookies.
