Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together the almond flour and baking soda. Add the salt and mix well.
  3. In a separate bowl, combine the mashed bananas, eggs, maple syrup, melted coconut oil, and vanilla extract. Mix until just combined.
  4. Pour the wet ingredients into the dry ingredients. Fold gently until you have a smooth batter. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
