- 2 medium zucchini
- 1 tablespoon olive oil
- 1/4 cup all-purpose flour or almond flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Wash and trim the ends of the zucchini. Cut the zucchini into 1/2-inch thick rounds or sticks.
- In a medium bowl, whisk together the flour, salt, pepper, and garlic powder. If using Parmesan, add it now.
- Toss the zucchini pieces with olive oil until lightly coated.
- Add the oiled zucchini to the flour mixture and toss until every piece has a light coating. Shake off any excess flour.
- Preheat your air fryer to 390°F (199°C) for 3 minutes.
- Place the coated zucchini in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
- Air fry for 8 to 10 minutes, shaking the basket halfway through, until the zucchini is golden brown and crisp.
- Serve immediately as a snack or side dish.
Notes
- To prevent sogginess, ensure the zucchini pieces are dry before coating and do not overlap them in the air fryer basket.
- For a spicy kick, add 1/4 teaspoon of paprika or cayenne pepper to the flour mixture.
- If you prefer sticks over rounds, cut the zucchini lengthwise into fry shapes before coating.
