Description

Make quick, crispy zucchini bites in your air fryer. This recipe uses a light coating for a healthy, low-carb side dish or snack.


Ingredients

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour or almond flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Wash and trim the ends of the zucchini. Cut the zucchini into 1/2-inch thick rounds or sticks.
  2. In a medium bowl, whisk together the flour, salt, pepper, and garlic powder. If using Parmesan, add it now.
  3. Toss the zucchini pieces with olive oil until lightly coated.
  4. Add the oiled zucchini to the flour mixture and toss until every piece has a light coating. Shake off any excess flour.
  5. Preheat your air fryer to 390°F (199°C) for 3 minutes.
  6. Place the coated zucchini in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
  7. Air fry for 8 to 10 minutes, shaking the basket halfway through, until the zucchini is golden brown and crisp.
  8. Serve immediately as a snack or side dish.

Notes

  • To prevent sogginess, ensure the zucchini pieces are dry before coating and do not overlap them in the air fryer basket.
  • For a spicy kick, add 1/4 teaspoon of paprika or cayenne pepper to the flour mixture.
  • If you prefer sticks over rounds, cut the zucchini lengthwise into fry shapes before coating.
