Description

Enjoy a quick and flavorful Mexican street corn, also known as Elote, made easily in your air fryer. This recipe brings you crispy corn kernels with a creamy, spicy, and tangy topping.


Ingredients

  • 2 ears of corn, husked and cleaned
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Cut the corn ears in half or into thirds.
  3. In a bowl, toss the corn pieces with olive oil until lightly coated.
  4. Place the corn in the air fryer basket in a single layer.
  5. Air fry for 10-12 minutes, flipping halfway through, until the corn is tender and slightly charred.
  6. While the corn is cooking, mix together mayonnaise, cotija cheese, lime juice, chili powder, garlic powder, and cayenne pepper (if using) in a small bowl.
  7. Once the corn is cooked, brush the mayonnaise mixture evenly over the hot corn.
  8. Garnish with fresh cilantro.

Notes

  • You can use frozen corn kernels if fresh corn is not available. Thaw and pat dry before tossing with oil.
  • If you don’t have cotija cheese, feta cheese can be a substitute.
  • Adjust the chili powder and cayenne pepper to your spice preference.
