Enjoy a quick and flavorful Mexican street corn, also known as Elote, made easily in your air fryer. This recipe brings you crispy corn kernels with a creamy, spicy, and tangy topping.

- 2 ears of corn, husked and cleaned
- 1 tablespoon olive oil
- 1/4 cup mayonnaise
- 2 tablespoons cotija cheese, crumbled
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Pinch of cayenne pepper (optional)
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your air fryer to 375°F (190°C).
- Cut the corn ears in half or into thirds.
- In a bowl, toss the corn pieces with olive oil until lightly coated.
- Place the corn in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, flipping halfway through, until the corn is tender and slightly charred.
- While the corn is cooking, mix together mayonnaise, cotija cheese, lime juice, chili powder, garlic powder, and cayenne pepper (if using) in a small bowl.
- Once the corn is cooked, brush the mayonnaise mixture evenly over the hot corn.
- Garnish with fresh cilantro.
Notes
- You can use frozen corn kernels if fresh corn is not available. Thaw and pat dry before tossing with oil.
- If you don’t have cotija cheese, feta cheese can be a substitute.
- Adjust the chili powder and cayenne pepper to your spice preference.
