Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 1/2 cups chicken broth
  • 1 cup uncooked white rice
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned. Remove sausage from skillet and set aside.
  2. Add chicken to the skillet and cook until browned on all sides. Remove chicken from skillet and set aside with the sausage.
  3. Add onion and bell pepper to the skillet. Cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes, Rotel, chicken broth, uncooked rice, Cajun seasoning, and thyme. Bring to a boil.
  5. Return the cooked sausage and chicken to the skillet.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier jambalaya, add a pinch of cayenne pepper.
  • You can substitute shrimp for chicken or add it in the last 5 minutes of cooking.
  • Ensure your skillet is large enough to hold all ingredients comfortably.
