Ingredients

  • 12 oz linguine or fettuccine
  • 2 tbsp olive oil
  • 1 lb large shrimp, peeled and deveined
  • 1 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley


Instructions

  1. Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp, Cajun seasoning, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add butter to the same skillet and melt over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  4. Pour in heavy cream and bring to a simmer. Cook for 3-5 minutes, stirring occasionally, until slightly thickened.
  5. Stir in Parmesan cheese until melted and the sauce is smooth.
  6. Add the cooked pasta and reserved pasta water to the skillet with the sauce. Toss to combine and coat the pasta evenly.
  7. Return the cooked shrimp to the skillet and toss gently to combine.
  8. Stir in fresh parsley. Serve immediately.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • If the sauce is too thick, add a little more reserved pasta water.
  • Feel free to add other vegetables like bell peppers or onions.
