- 12 oz linguine or fettuccine
- 2 tbsp olive oil
- 1 lb large shrimp, peeled and deveined
- 1 tsp Cajun seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp, Cajun seasoning, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add butter to the same skillet and melt over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in heavy cream and bring to a simmer. Cook for 3-5 minutes, stirring occasionally, until slightly thickened.
- Stir in Parmesan cheese until melted and the sauce is smooth.
- Add the cooked pasta and reserved pasta water to the skillet with the sauce. Toss to combine and coat the pasta evenly.
- Return the cooked shrimp to the skillet and toss gently to combine.
- Stir in fresh parsley. Serve immediately.
Notes
- Adjust Cajun seasoning to your spice preference.
- If the sauce is too thick, add a little more reserved pasta water.
- Feel free to add other vegetables like bell peppers or onions.
