Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  2. Add onion and bell peppers to the same skillet. Cook until softened, about 5-7 minutes.
  3. Stir in chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for 1 minute more until fragrant.
  4. Return chicken to the skillet and stir to combine with vegetables and spices.
  5. Wipe the skillet clean or use a separate griddle. Place one tortilla in the skillet. Sprinkle half of the tortilla with 1/4 cup Monterey Jack cheese and 1/4 cup Cheddar cheese. Top with 1/4 of the chicken and vegetable mixture. Fold the tortilla in half.
  6. Cook for 2-3 minutes per side, until golden brown and cheese is melted. Repeat with remaining tortillas and filling.
  7. Cut quesadillas into wedges and serve immediately with your favorite toppings.

Notes

  • For a vegetarian option, omit the chicken and add black beans or corn.
  • Adjust the spice level by adding more or less chili powder.
  • Ensure your skillet is hot before adding the quesadillas for a nice crisp.
