Ingredients

  • 8 ounces dried flat rice noodles
  • 1 tablespoon vegetable oil
  • 8 ounces peeled and deveined shrimp
  • 2 cloves garlic, minced
  • 1/4 cup pad thai sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1/4 cup chopped unsalted peanuts
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges


Instructions

  1. Cook rice noodles according to package directions. Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet.
  3. Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
  4. Stir in the pad thai sauce, fish sauce, and sugar. Bring to a simmer.
  5. Add the cooked noodles and shrimp back to the skillet. Toss to coat evenly with the sauce.
  6. Serve immediately, garnished with chopped peanuts, cilantro, and lime wedges.

Notes

  • You can adjust the spice level by adding a pinch of red pepper flakes with the garlic.
  • If you don’t have pad thai sauce, you can make your own with tamarind paste, soy sauce, and sugar.
  • For a vegetarian option, substitute firm tofu for shrimp and use a vegetarian fish sauce alternative.
