- 8 ounces dried flat rice noodles
- 1 tablespoon vegetable oil
- 8 ounces peeled and deveined shrimp
- 2 cloves garlic, minced
- 1/4 cup pad thai sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1/4 cup chopped unsalted peanuts
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Cook rice noodles according to package directions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet.
- Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
- Stir in the pad thai sauce, fish sauce, and sugar. Bring to a simmer.
- Add the cooked noodles and shrimp back to the skillet. Toss to coat evenly with the sauce.
- Serve immediately, garnished with chopped peanuts, cilantro, and lime wedges.
Notes
- You can adjust the spice level by adding a pinch of red pepper flakes with the garlic.
- If you don’t have pad thai sauce, you can make your own with tamarind paste, soy sauce, and sugar.
- For a vegetarian option, substitute firm tofu for shrimp and use a vegetarian fish sauce alternative.
