- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup dry white wine (like Pinot Grigio) or chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper to taste
- Red pepper flakes, optional
Instructions
- Cook linguine according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While pasta cooks, pat shrimp dry with paper towels. Season with salt and pepper.
- Melt butter in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn.
- Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Pour white wine (or broth) and lemon juice into the skillet. Bring to a simmer and cook for about 2 minutes, scraping up any browned bits from the bottom.
- Return shrimp to the skillet. Add drained pasta and chopped parsley. Toss to combine.
- If the sauce seems too thick, add a little reserved pasta water until it reaches your desired consistency.
- Season with additional salt and pepper, and red pepper flakes if using. Serve immediately.
Notes
- For an extra kick, add a pinch of red pepper flakes with the garlic.
- If you don’t have white wine, chicken broth works well as a substitute.
- Fresh parsley adds a bright, fresh flavor, but dried parsley can be used in a pinch (use about 2 teaspoons).
