Description
Quick and creamy Tuscan chicken dish made in one pan.
Ingredients

- 1 pound boneless, skinless chicken breasts, sliced thinly
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in garlic and sun-dried tomatoes and cook for 1 minute more.
- Pour in heavy cream and chicken broth. Bring to a simmer and cook for 2-3 minutes, stirring occasionally.
- Stir in Parmesan cheese until melted and sauce is slightly thickened.
- Add spinach and cook until wilted.
- Return chicken to the skillet and stir to coat in the sauce.
- Serve immediately.
Notes
- You can use chicken thighs instead of breasts.
- Adjust the amount of sun-dried tomatoes to your liking.
- Freshly grated Parmesan cheese works best.
