Start your day with this quick and delicious 15-minute Breakfast Fried Rice. It’s a savory and hearty meal perfect for busy mornings, using leftover rice and your favorite breakfast additions.


Ingredients

  • 1 tablespoon vegetable oil
  • 2 slices bacon, chopped
  • 1/4 cup chopped onion
  • 1 cup cooked rice, cold
  • 1 large egg, lightly beaten
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a skillet over medium-high heat. Add chopped bacon and cook until crispy. Remove bacon and set aside.
  2. Add chopped onion to the skillet and cook until softened, about 2-3 minutes.
  3. Push the onions to one side of the skillet. Pour the beaten egg into the empty side and scramble until just cooked.
  4. Add the cold cooked rice to the skillet. Break up any clumps and stir-fry with the onions and scrambled egg for 3-4 minutes, until heated through.
  5. Stir in the cooked bacon, soy sauce, and sesame oil. Mix well to combine.
  6. Season with salt and pepper to taste.
  7. Serve immediately.

Notes

  • Using cold, day-old rice is best for fried rice as it prevents the grains from becoming mushy.
  • You can add other breakfast favorites like chopped ham, sausage, or vegetables like bell peppers or peas.
