- 1 tablespoon vegetable oil
- 2 slices bacon, chopped
- 1/4 cup chopped onion
- 1 cup cooked rice, cold
- 1 large egg, lightly beaten
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a skillet over medium-high heat. Add chopped bacon and cook until crispy. Remove bacon and set aside.
- Add chopped onion to the skillet and cook until softened, about 2-3 minutes.
- Push the onions to one side of the skillet. Pour the beaten egg into the empty side and scramble until just cooked.
- Add the cold cooked rice to the skillet. Break up any clumps and stir-fry with the onions and scrambled egg for 3-4 minutes, until heated through.
- Stir in the cooked bacon, soy sauce, and sesame oil. Mix well to combine.
- Season with salt and pepper to taste.
- Serve immediately.

- Using cold, day-old rice is best for fried rice as it prevents the grains from becoming mushy.
- You can add other breakfast favorites like chopped ham, sausage, or vegetables like bell peppers or peas.
