- 8 ounces pasta (such as spaghetti or linguine)
- 2 cups cherry tomatoes, halved
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil leaves, chopped
- 4 ounces fresh mozzarella, diced
- 2 tablespoons balsamic glaze (optional)
Instructions
- Combine pasta, halved cherry tomatoes, olive oil, minced garlic, salt, and pepper in a large pot or Dutch oven.
- Add 3 cups of water to the pot.
- Bring to a boil over high heat, then reduce heat to medium-high and cook, stirring occasionally, for about 8-10 minutes, or until pasta is al dente and most of the liquid has been absorbed.
- Remove from heat. Stir in chopped fresh basil and diced fresh mozzarella until the cheese is slightly melted.
- Serve immediately, drizzled with balsamic glaze if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes with the garlic.
- If you don’t have fresh mozzarella, you can use shredded mozzarella, but add it in the last minute of cooking.
- Feel free to add a squeeze of lemon juice at the end for extra brightness.
