Description

Za’atar Grilled Vegetable Wraps are a delicious and healthy meal option featuring grilled fresh vegetables wrapped in whole wheat tortillas with a za’atar spice blend and creamy hummus.


Ingredients

Scale
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons za’atar spice blend
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • 1 cup hummus
  • Chopped parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the vegetables by slicing them into appropriate sizes.
  3. Season the vegetables with olive oil, za’atar, salt, and pepper.
  4. Grill the vegetables for 5-7 minutes until tender.
  5. Spread hummus on each tortilla and add the grilled vegetables.
  6. Roll the tortillas tightly to form wraps.
  7. Slice the wraps in half and garnish with chopped parsley.
