Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and 1 1/4 cups of water in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and let it simmer for 20 minutes.
  4. Remove from heat and let it sit covered for an additional 10 minutes.
  5. Peel and cut the sweet potato into thin strips, then steam or boil until tender (about 10 minutes).
  6. Allow the sweet potato to cool.
  7. Place a sheet of nori on a bamboo sushi mat or clean surface.
  8. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about an inch at the top edge.
  9. Arrange sweet potato strips, avocado slices, and julienned cucumber in a line across the center of the rice.
  10. Using the bamboo mat, roll the sushi away from you, applying gentle pressure to form a tight roll.
  11. Seal the roll with a little water at the top edge of the nori.
  12. Slice each roll into bite-sized pieces using a sharp knife.
  13. Serve with soy sauce for dipping and enjoy!
