Description

Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 large apple, julienned (preferably a tart variety)
  • 1/2 cup grated carrots
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables thoroughly.
  2. Finely shred the green and red cabbage.
  3. Julienne the apple into thin strips.
  4. Grate the carrots and chop the cilantro and green onions.
  5. In a separate bowl, mix mayonnaise, apple cider vinegar, honey, and Dijon mustard to make the dressing.
  6. Whisk until smooth, then add cayenne pepper, salt, and pepper.
  7. Pour the dressing over the prepared vegetables and toss gently to combine.
  8. Let the slaw rest for at least 15 minutes before serving.
