Instructions
- Prepare the miso marinade by whisking together miso paste, soy sauce, honey, sesame oil, and rice vinegar in a small bowl.
- Marinate the chicken thighs in the miso marinade for at least 30 minutes, up to 2 hours.
- Grill the marinated chicken for 5-7 minutes on each side until cooked through.
- Char the bok choy in a skillet with vegetable oil for 2-3 minutes on one side, then flip and cook for an additional minute.
- Assemble the bowl with cooked rice, sliced grilled chicken, and charred bok choy. Garnish with sesame seeds and green onions if desired.
