Instructions

  1. Prepare the miso marinade by whisking together miso paste, soy sauce, honey, sesame oil, and rice vinegar in a small bowl.
  2. Marinate the chicken thighs in the miso marinade for at least 30 minutes, up to 2 hours.
  3. Grill the marinated chicken for 5-7 minutes on each side until cooked through.
  4. Char the bok choy in a skillet with vegetable oil for 2-3 minutes on one side, then flip and cook for an additional minute.
  5. Assemble the bowl with cooked rice, sliced grilled chicken, and charred bok choy. Garnish with sesame seeds and green onions if desired.
