Instructions
- Cook the pearl barley in boiling water or vegetable broth for 30-35 minutes until tender but chewy. Drain and cool.
- Prepare the vegetables: halve cherry tomatoes, dice cucumber, chop red onion, and slice Kalamata olives.
- Make the dressing by whisking together olive oil, red wine vinegar, oregano, salt, and pepper.
- In a large bowl, combine cooled barley, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and pistachios.
- Pour the dressing over the salad, toss gently, and adjust seasoning if necessary. Serve chilled or at room temperature.
