  • 1 cup Pearl Barley
  • 2 1/2 cups Water or Vegetable Broth
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 1/2 Red Onion, finely chopped
  • 1/2 cup Kalamata Olives, sliced
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Pistachios, chopped
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste

Instructions

  1. Cook the pearl barley in boiling water or vegetable broth for 30-35 minutes until tender but chewy. Drain and cool.
  2. Prepare the vegetables: halve cherry tomatoes, dice cucumber, chop red onion, and slice Kalamata olives.
  3. Make the dressing by whisking together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. In a large bowl, combine cooled barley, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and pistachios.
  5. Pour the dressing over the salad, toss gently, and adjust seasoning if necessary. Serve chilled or at room temperature.
