Instructions
- Preheat your grill or grill pan to medium-high heat.
- Brush both sides of the watermelon slices and halloumi with olive oil, and season with salt and pepper.
- Grill the watermelon slices for about 3-4 minutes on each side until caramelized.
- Add the halloumi cheese to the grill and cook for about 2-3 minutes on each side until golden brown.
- Assemble the wraps by laying a tortilla on a clean surface, adding grilled watermelon and halloumi, drizzling with balsamic glaze, and garnishing with fresh mint.
- Fold the sides of the tortilla over the filling and roll it up tightly. Slice in half and serve immediately.
