Description

Grilled Watermelon and Halloumi Wraps are a refreshing and satisfying dish that combines the sweetness of watermelon with the savory goodness of halloumi cheese, perfect for summer gatherings or a light lunch.


Ingredients

  • 2 cups watermelon, cut into thick slices 🍉
  • 8 oz halloumi cheese, sliced 🧀
  • 4 large tortillas or flatbreads 🌯
  • 2 tbsp olive oil 🫒
  • 1 tbsp balsamic glaze 🍇
  • Fresh mint leaves, for garnish 🌿
  • Salt and pepper, to taste 🧂

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Brush both sides of the watermelon slices and halloumi with olive oil, and season with salt and pepper.
  3. Grill the watermelon slices for about 3-4 minutes on each side until caramelized.
  4. Add the halloumi cheese to the grill and cook for about 2-3 minutes on each side until golden brown.
  5. Assemble the wraps by laying a tortilla on a clean surface, adding grilled watermelon and halloumi, drizzling with balsamic glaze, and garnishing with fresh mint.
  6. Fold the sides of the tortilla over the filling and roll it up tightly. Slice in half and serve immediately.
