Ingredients
- Fresh figs – 8-10, sliced
- Almond flour – 1/2 cup
- Granulated sugar – 1/4 cup
- Vanilla extract – 1 tsp
- Cinnamon – 1/2 tsp
- Salt – 1/4 tsp
- Pie crust – 1 (store-bought or homemade)
- Egg – 1, beaten (for egg wash)
- Sliced almonds – optional, for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the fig filling by mixing sliced figs, almond flour, sugar, vanilla extract, cinnamon, and salt in a bowl.
- Roll out the pie crust into a rough circle about 12 inches in diameter.
- Spoon the fig mixture into the center of the rolled-out crust, leaving a 2-inch border.
- Fold the edges of the crust over the filling, pleating as you go.
- Brush the edges with a beaten egg and sprinkle with sliced almonds if desired.
- Bake for 25-30 minutes until the crust is golden brown and the figs are bubbly.
- Allow to cool slightly before slicing and serving.
